This is a healthy salad that we often make for lunch. Any type of raw vegetable can be used. Sometimes I substitute lime juice for the red wine vinegar and add chopped fresh cilantro.

I opened a can of peas tonight just to give my 9 month old peas with his dinner, yep an entire can just to feed a kid about 2 tbs. See, my husband doesn't like peas and I don't eat until after the little man is in bed so they were all for him. Lol. After he was in bed I decided I wanted pea salad, but I didn't have everything that normally goes into the version I was taught to make. You my mom so this is kind of a modified version with what I had on hand thrown in.

My grandma made these all the time when I was a kid. I loved them!*If you don't like mayo you can use whipped topping, cream cheese, yogurt, etc.. you can change the fruit, add chopped nuts.. whatever best suits your taste!
