Ingredients

  1. 2 lbchicken tighs
  2. 2 lbpotatoes (cut and peeled)
  3. 5 ozKale (Fresh)
  4. 1 cuponion chopped
  5. 5 clovegarlic minced
  6. 1 eachred bell pepper (seeds removed and sliced)
  7. 1/4 cupolive oil or more as desired
  8. 1 tspdried thyme
  9. 1 tspdried rosemary
  10. 1/2 cupchopped apple (optional)
  11. 1 tspeach salt, pepper and paprika
  12. 1/2 cupcranberries dried
  13. 1/4 cuptoasted almonds sliced
  14. Garnish
  15. 1/2 cuplemon wedges cut in fours
  16. 1/2 tbspparsley fresh

Cooking Instructions

    Heat oven 450°F. Clean and peel potatoes. Put in bowl with water until ready for use.

    When ready, drain potatoes and add kale and garlic. Drizzle with olive oil. Add salt and pepper.

    Slice onion and add.

    Add red bell pepper.

    Add chicken thighs, salt pepper paprika to taste and herbs.

    Add cranberries and almonds.

  7. 7

    Cook one hour with top on and serve with fresh parsley and lemon wedges.

my husband loved it. he went back for seconds and asked me to cook once a week. the combination of flavors are brilliant! !!! sorry I forgot to take a picture it was gone fast ill try to remember next time
