Ingredients

  1. 4 mediumfirm ripe tomatoes cut in half
  2. 2 cupitalian blend shredded cheese
  3. 2 tbspfresh basil, chopped
  4. 2 tbspfresh parsley, chopped
  5. 1/2teaspooon dryed italian seasoning
  6. 1/2 tspgarlic powder
  7. 1/2 tspblack pepper
  8. 1/2 tspsalt
  9. 8 sliceof pepperoni
  10. 1/4 tspred pepper flakes
  11. 1 tbspolive oil mixed with 1 teaspoon balsamic vinegar

Cooking Instructions

    Spray a baking dish big enough to just hold tomatoes in one layer with non-stick spray

  2. 2

    Place tomatoes cut side up in dish lightly brush with olive oil mixture then evenly sprinkle salt, pepper, garlic powder and dry Italian seasoning

    In a bowl, toss cheese blend with fresh basil, parsley and red pepper flakes

  4. 4

    Divide cheese evenly on top of seasoned tomato's, place a peperoni slice in the center of each tomato half

  5. 5

    Bake in a preheated 425 oven for 35 to 45 minutes until the cheese is melted and the tomatoes tender but not falling apart

    Serve hot with any main dish or for a light lunch with a salad

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.

definitely a good recipe just watch the cook times... if I would had mine in for over 25 mins they would've been black
