Cooking Instructions

Preheat oven to 350°F.

Mix together vinegar, honey, vanilla, soy sauce and curry to taste.

Put chicken in deep dish suitable for the oven

Sprinkle sage, basil, black pepper over the chicken
- 5
Pour half of honey mixture over chicken and place in oven for 30 mins
- 6
Pour last half of honey mixture over chicken and turn oven up to 375°F
- 7
Cook for additional 15 minutes
- 8
Serve over rice.....

I was actually whipping something up off the top of my head so, of course, I had to look it up right away. Turns out chicken hamonado is a Filipino recipe for chicken in pineapple sauce. It was a little weird to get this revelation from my wife, who's the non-Filipino in the family. She explained that she knew the dish because the Filipino ladies from her church used to bring it to potlucks. My version deviates quite a bit from the theirs.
