Inspired by one of our favorite appetizers. And also we hadn't made it to the grocery store yet so we threw this together with what we had in the fridge. We'll definitely be making this again! Hope you like it! 😊

Jalapeño popper rice

Ingredients

  1. 4slices chopped bacon
  2. 1link Cajun sausage sliced
  3. 4large jalapeños seeded/diced
  4. 1/4red onion diced
  5. 4cloves of peeled/diced garlic
  6. 2servings cooked brown rice
  7. 1/2 cupshredded pepper jack cheese
  8. 1/4 cupBBQ sauce

Cooking Instructions

40 mins
  1. 1

    Prepare rice (this part takes the longest time)

    Cook bacon until it starts to brown.

  3. 3

    Add sausage to bacon and brown

  4. 4

    Add diced jalapeños, onion and garlic to bacon and sausage. Cook for 5 minutes on medium heat.

    Add BBQ sauce to pan stir in

  6. 6

    Divide prepared rice into two bowls. Cover rice with cheese.

  7. 7

    Spoon sausage/bacon/jalapeno mixture over rice.

  8. 8

    Serve with more BBQ sauce
