This is my new recipe. I used to make them very plain. This time I used apple cider vinegar for the cooking process but distilled vinegar for the cleaning process...
Cooking Instructions

CLEAN Chitterlings

Place in (cleaning ingredients) cold water and 1 tablespoon of vinegar and let soak for 20-30 minutes

Drain, place in pot with enough water to cover them

Being to a boil on med-high heat
- 5
Drain, rinse with warm water and fill up pot again covering Chitterlings with water

Turn heat to med-low, dice potato and slice onion
- 7
Add potato & onion to simmering pot

Add seasonings, minced garlic and vinegar

If adding spice add now
- 10
Simmer pot covered for 3 hours until tender

When I was chosen as a food tester, I tried to make some stewed dishes with vinegar. Although I love simmered dishes, I often notice that the stewing sauce tends to be too salty to eat. I didn't want to waste any good sauce so I added less soy sauce and seasoned mine with vinegar to make the dish itself lighter.I like chicken drumsticks for this recipe. They have a lot of collagen and it makes the sauce very tasty. Fry the chicken until golden brown and vegetables until slightly translucent.
