Ingredients

  1. 3 lbred potatoes; cut in fourths
  2. 1red onion; large dice
  3. 1red bell pepper; medium dice
  4. 1yellow bell pepper; medium dice
  5. 1 headcelery; medium dice
  6. 3 clovegarlic; minced
  7. 1 tbspginger; finely minced
  8. 1 bunchbasil
  9. 2 cupmayonnaise
  10. 1/2 cupSriracha
  11. 1/2 cuprice wine vinegar
  12. 2 tbsppaprika
  13. 1salt and pepper

Cooking Instructions

  1. 1

    Boil potatoes until fork tender. Submerge in ice water to stop the cooking process. Drain. Pat dry.

    Combine mayonnaise, Sriracha, vinegar, and dry seasonings in a large mixing bowl. Toss potatoes and veggies with dressing and fresh basil.

    *Optional: Sweat veggies and garlic in olive oil until tender.
