Greek Spinach pie is good anytime of the day & Loved at every party ♡
Cooking Instructions

Preheat oven to 375°F Heat tablespoon of oil in skillet over medium heat | Add white/green onions; cook until translucent 3 - 4 minutes | Season with Salt & Pepper

Meanwhile, mix spinach, feta, cottage cheese and egg in medium mixing bowl | Add cooled cooked onions | Melt butter and set aside

Remove the phyllo sheets from the package and cut down the center then cut again putting it on top of each other | Cutting it into 3 inch vertical strip

Brush the phyllo with melted butter | Spoon out a tablespoon of mixture to the bottom | Grab 2-3 pieces of the left corner of the phyllo dough and begin to fold into a triangle shap

Brush tops of traingle spinach pie with melted butter | Bake for 15-20 minutes or until golden brown.

Optional - You could skip Step #3 & #4 completely and just brush a mini muffin pan with butter and drop in pre-made phyllo cups and fill with mixture.

Hi Everyone!! I wanted to share with you this Spinach Pie recipe that my mom gave me many moons ago. I remember it was hard to find Greek products in our area, so once a month we had a day trip to Astoria. Wow!!! that was a long time ago, anyway we would go to this little Greek Deli Store to buy what she needed for the month. She always had a list ready, (and she still does today) with the usual products. Feta, Coffee, Olives, Oil, classic right! I know!! :0Till this day, whenever I go back to Greece to visit my mom, we go to Athens City Center into the old market area…have a cup of coffee, catch up on things, and then go shopping. In Athens the old Deli’s stores still exist with the cheeses, and spices in huge barrels, sausages, you can even find a huge variety of peanuts, I can go on and on but there are just too many products to write down.So, now for the recipe….:) Hope you enjoy making it!!! Hello everyone! this will be the last recipe I will be posting for the next two weeks, it’s that time of year. I would like to wish all that have not yet gone on vacation to enjoy, relax and be safe. There are so many variations of cheese spreads in the greek cuisine, that are so easy to make in just a few minutes, so here is one delicious spread with a few ingredients. Great cheese spread for bread, crackers, fried Zucchini, Aubergine, or anything else you love adding cheese spread on. I know some people who actually put this on their pasta instead of sauces…:) A bit of information about the word Kopanisti the definition is: to beat something (Ko-pa-ni-so)…hahahaha…sometimes the definitions are funny. 🙂The original recipe comes from the Aegean Islands of Tinos, Syros, and Mykonos. The cheese they use on these islands is not Feta cheese, they use a cheese that they produce called Tyrovolia. The taste is not the same as Feta cheese, it’s similarity is more towards cottage cheese.Now, this recipe has been tweaked with Feta cheese, and with the delicious mix of yogurt, peppers, and Cayenne paprika, makes it spicy, salty with a mouthwatering taste you will enjoy.
