Cooking Instructions

Preheat oven to 350 degrees.
Grease a square baking tray with cooking spray.
Heat olive oil in a pan over medium heat. Saute onion, green onions, and garlic until softened and just starting to turn colour Add chopped spinach. - 2
Saute until spinach is warmed, about 2 minutes or so. add salt,black pepper and mixed herbs.add cottage cheese. Keep aside.

Melt the butter in a small sauce pan. Layer one sheet of phyllo into the prepared Grease tray. lightly brushing with the melted butter Now, repeat with 4 more sheets. fanning them in the tray so they overlap. Add the spinach mixture and spread evenly.

Fold in all four corners of the phyllo. you can layer the 5 remaining sheets (buttered in between each sheet) and just neatly tuck in the edges.
Bake in preheated oven for 20-25 minutes. If the top is browning too quickly, cover loosely with foil mid-way through the baking process. The top should be golden and the filling warm inside.
Test with a knife.Let stand for 5-10 minutes before cutting and serving.

Hi Everyone!! I wanted to share with you this Spinach Pie recipe that my mom gave me many moons ago. I remember it was hard to find Greek products in our area, so once a month we had a day trip to Astoria. Wow!!! that was a long time ago, anyway we would go to this little Greek Deli Store to buy what she needed for the month. She always had a list ready, (and she still does today) with the usual products. Feta, Coffee, Olives, Oil, classic right! I know!! :0Till this day, whenever I go back to Greece to visit my mom, we go to Athens City Center into the old market area…have a cup of coffee, catch up on things, and then go shopping. In Athens the old Deli’s stores still exist with the cheeses, and spices in huge barrels, sausages, you can even find a huge variety of peanuts, I can go on and on but there are just too many products to write down.So, now for the recipe….:) Hope you enjoy making it!!! "Pogacoh" we call, these are very traditional breakfast or tea time treats in Turkey and have different kinds of fillings : cheese, potato, ground meat,spinach . In this recipe I used corn flour and spinach and kale as well as red pepper and feta cheese.I used 2 cups of corn flour and 1,5 cups wheat flour for the dough.But next time I will use 1 cup corn flour 2 cups of wheat flour instead.I like crunchy taste,my daughter really love it, but I am adjusting this recipe for the better taste. another trick is if you are using spinach or kale,and bell peppers, you sprinkle a tea spoon salt over them, a few minutes later you will squeeze excess water out of the vegetables.or use ground meat with sauteing onions in a small pan with little oil,with ground meat adding salt .pepper and some garlic,maybe some tomato paste for the color,and cool it for filling.
