Peanut Butter Middle Cookies

This cookie has been around in some form or another for as long as I can remember. It's a great treat with the candy in the middle. Choose the classic Herseys kiss chocolate or your favorite fun size candy for the middle, even have everyone customize their own !!

Ingredients

  1. 1/2 cupunsalted butter at room temperature
  2. 3/4 cuppeanut butter you can use creamy or crunchy
  3. 1/3 cupgranulated sugar
  4. 1/3 cuppacked light brown sugar
  5. 1 largeegg
  6. 2 tbspmilk
  7. 1 tspvanilla extract
  8. 1 1/2 cupall purpose flour
  9. 1 tspbaking soda
  10. 1/2 tspsalt
  11. 26unwrapped chocolate candys such as hersheys kisses, mini milky ways, mini peanut btter cups, rolo caramel ,or fun size candy cut in half such as snickers, mounds, almond joy
  12. 1 cupgranulated sugar for rolling cookie balls

    Line your cookie sheets with parchment paper, preheat oven to 375

    In a large bowl mix the butter and peanut butter until well blended. Add the sugars beat until light and fluffy. Add the egg milk and vanilla and beat well

    Stir the flour,baking soda and salt together. Mix the flour mixture gradually into the peanut butter mixture just until combined

    Shape the dough into 26 balls. Roll the balls into the granulated sugar for rolling, place balls on prepared cookie sheets

    Bake for10 to 14 minutes until golden remove cookie sheet from oven immediately gently press a chocolate candy into center of cookie let cool on cookie sheet for 5 minutes before transferring to cookie sheet to cool completely

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
