We always have leftover couscous from dinner. I make these tasty little treats the day after to use it up!

Ingredients

6 servings
  1. 2 cupCooked Couscous (I always use Roasted Garlic flavored)
  2. 2Eggs, beaten lightly
  3. 1/4 cupparmesan cheese
  4. 1 tbspFresh basil, chopped
  5. 2 tbspFlour
  6. 1/4 cupOlive Oil

Cooking Instructions

    In a bowl, combine couscous, eggs, cheese and basil. Mix well with hands.

    Sprinkle flour over the top and mix again.

  3. 3

    Heat olive oil in medium skillet.

  4. 4

    Form couscous mixture into patties. (I use a 1/2 cup measuring cup, pushing the mix in lightly and then turning it out into the pan)

    Gently press the cakes down with a spatula to flatten slightly.

  6. 6

    Brown on both sides until golden, about 3 minutes per side.

  7. 7

    Drain cakes on paper towels to remove excess oil

  8. 8

    Serve. I always like to serve with thickly sliced tomatoes, but they are delicious all on their own.
