Couscous pasta salad

I found this dish at the salad bar at my work's cafeteria. I dissected it and was able to create it. My family loves it. I usually have to make a double batch. It goes really fast. Perfect for lunch. Great for a light vegetarian dinner. Add a chicken breast to it if you desire. You can also replace dill with basil.

I found this dish at the salad bar at my work's cafeteria. I dissected it and was able to create it. My family loves it. I usually have to make a double batch. It goes really fast. Perfect for lunch. Bring chicken broth to boil in a small pot. Remove from heat. Quickly pour in Couscous and stir briefly, then cover pot. Let stand for 5 minutes. Then fluff with a fork and stir in the herb a bit.

Chop up all your veggies. Place in bowl.

Add Coucous to the same bowl and the rest of the ingredients. Stir it all up.

You can eat it right away, but it's best to let it sit covered in the fridge for at least an hour first or preferabley overnight.
