I found this dish at the salad bar at my work's cafeteria. I dissected it and was able to create it. My family loves it. I usually have to make a double batch. It goes really fast. Perfect for lunch. Great for a light vegetarian dinner. Add a chicken breast to it if you desire. You can also replace dill with basil.

Ingredients

4 servings
  • 1 cupchicken broth
  • 1 cupCouscous
  • 1/4 cupRed Onion - Diced
  • 1 cupCucumber - Diced
  • 1 cupCherry Tomatoes - Halved
  • 1 cupBrocolli - Chopped
  • 2 tbspFresh Dill
  • 1/3 cupFeta Cheese
  • 2 tbspBalsamic Vinegarette Salad Dressing
  • 1/4 tspSalt

Steps

  1. 1

    Bring chicken broth to boil in a small pot. Remove from heat. Quickly pour in Couscous and stir briefly, then cover pot. Let stand for 5 minutes. Then fluff with a fork and stir in the herb a bit.

  2. 2

    Chop up all your veggies. Place in bowl.

  3. 3

    Add Coucous to the same bowl and the rest of the ingredients. Stir it all up.

  4. 4

    You can eat it right away, but it's best to let it sit covered in the fridge for at least an hour first or preferabley overnight.
