Cooking Instructions

Mix all dry ingredients together (baking soda, flour, corn meal, sugar, salt, old bay seasoning, black pepper) in a bowl. Make sure the mixture is free of lumps.

Melt the butter.

Combine the dry mixture with the egg, milk, and butter in the bowl. (The batter must have a thick consistency; if it is milky add more flour)

Mince the onion and add to the batter.

Pour 2 cups of vegetable oil in a saucepan and heat. (TEST: if oil is hot, sprinkle with a pinch of flour. It must sizzle)

Add a tablespoon of batter to the hot oil. (about four to six will fit)

Let them cook for about five to eight minutes.

Take them out and place on a paper towel or cookie rack to cool for about two minutes.

Serve and enjoy!

These are simple to prepare but time consuming to fry. You can not crowd the pan or the cheese can leak out with the lowering of the oil. If cooked in very small batches they turn golden in minutes and can be set to drain on a wire rack over a foil lined baking oan. This makes a lot of hush puppies if using small scoops. May make as big or small as you like. I use a very small ice cream scoop. I think it is a tablespoon size scoop. It makes them bite size. But you can use soup or teaspoon to drop in oil as well. Raven -
