If you’re gonna fry fish around here you MUST have hushpuppies. These are crisp on the outside and soft and fluffy on the inside. This is a BASIC recipe and you can add anything you want to them. I personally love Mexican cornbread and adding jalapeños and cheese is wonderful. Adding fresh cut corn is really good too.

These cheese filled hushpuppies came about after my husband returned from a buisness trip to New Orleans and had hushpuppies stuffed with cheese. He loved the creamy cheese centers. These are simple to prepare but time consuming to fry. You can not crowd the pan or the cheese can leak out with the lowering of the oil. If cooked in very small batches they turn golden in minutes and can be set to drain on a wire rack over a foil lined baking oan. Then all fryed hushpuppies reheated just until hot for a crispy, slightly spicy crust with a melting creamy center!

This makes a lot of hush puppies if using small scoops. May make as big or small as you like. I use a very small ice cream scoop. I think it is a tablespoon size scoop. It makes them bite size. But you can use soup or teaspoon to drop in oil as well.

If you need a side of bread to go with your meal... These southern Hush Puppies are simply delicious lite bites of cornmeal batter flavored with onion and dropped into hot oil until the outside is crispy and browned to perfection and the inside soft and fluffy.

I used onion powder instead of onions and added a little sugar. These make me miss home so much! My kids LOVE them too :)

This recipe ultimately originates from the first cookbook I ever owned (Fast, Fresh, and Delicious, Time-Life Books, 1996, ISBN 0-7835-4862-1) which I'd been mining for recipes ever since I first got it almost 20 years ago. This is the first time I ever tried making this one though, and the gravy recipe is entirely my own.

I love hush puppies anytime of the year, but Christmas time I add extra ingredients just to be festive. Great as an appetizer, snack or with chili, stews or soups.#12plates
