I moved to Texas 20 years ago from California and remember my mom making posole for my dad. I decided to give it a try and it was amazing! I haven't seen it too much in TX but maybe I'm just not lookin in the right places. Great thing is you can make this with chicken too.

Ingredients

  1. 4 lbpork shoulder
  2. 12 cupwater
  3. 6 clovegarlic
  4. 1 tbspsalt
  5. 8Dried California Chiles
  6. 1/4 tsporegano
  7. 3 canhominy (white or yellow or mixed)
  8. 1 cantomato sauce
  9. 1 cubepork boullion
  10. Toppings
  11. 1shredded cabbage
  12. 1diced onion
  13. 1cilantro
  14. 1radishes
  15. 1lemons or limes

    Cut pork shoulder into fourths and add to a 6 or 8-quart soup pot. Grate the garlic over the meat. Season with salt. Heat the pot over medium-high heat and brown the meat on all sides. Using some kitchen tongs, keep turning the meat and pushing it down to speed up the process. This should take about 3 - 4 minutes.
