Most people I know of in the south make this recipe by soaking the pickles in buttermilk before dredging. That method takes out the bite of the dill pickles and makes them not so sour. So if youre not real fond of pickles but want to try this recipe, that would be the way to go.
I used a homeade beer batter that flufs up a bit when you cook them and tastes really light and airy for being fried. However you choose to make these, this southern staple is a must have for pickle lovers! :-)

Ingredients

  1. 132 oz jar dill pickles or pickle chips already cut
  2. 1vegetable/canola oil for frying
  3. Beer Batter
  4. 1-12 oz beer at room temperature
  5. 1 1/2 cupall purpose flour
  6. 1/2 tspgarlic powder
  7. 1 tspsalt
  8. 1/4 tspcayenne pepper
  9. 1 tsppaprika
  10. Flour Dredge Mixture
  11. 1 1/2 cupall purpose flour
  12. 1 tspsalt
  13. 1 tsppaprika
  14. 1/2 tspgarlic powder
  15. 1/2 tsponion powder
  16. Spicy Ranch Dipping Sauce
  17. 1/3 cupranch dressing
  18. 1 1/2 tbspsriracha hot chili sauce
  19. 1/4 tspgarlic powder

Cooking Instructions

    Drain and cut up the pickles into thin slices. (Or make it easy and buy the dill pickle chips already sliced in the jar.)

    Pat dry the pickle slices in small batches. This step is very important if you want your batter to adhere correctly. Set aside.

    In a medium mixing bowl combine all of the dry beer batter ingredients. Slowly whisk the beer into the dry ingredients until the whole beer is mixed in and batter is thick.

    Mix all of the flour dredge ingredients in a separate bowl.

    Line a plate with paper towels for pickles to drain on when done frying.

    In a medium skillet pour enough oil to cover about 1 inch. Heat on medium high heat.

    Drop pickles in beer batter in small batches (as to not overcrowd the pan while cooking). Toss and coat well.

    Then, take pickles from the beer batter and put them in the flour dredge. Toss and coat well.

    Place breaded pickles into pan and fry on both sides until golden brown. Transfer to paper towels to drain excess oil.

    While pickles are cooking, mix all ingredients for ranch dipping sauce and refrigerate until all pickles are done cooking. Enjoy!

I'm a sweet and sassy southern belle that lovesss to cook! I totally missed my calling lol Nonetheless, I'm always coming up with new recipes to share and love the recipes from you on this app! I cook a lot with fresh vegetables and fruits but my first love is fresh herbs! I garden a lot and love to cook what I grow. I've made this twice now. Great recipe! I had my 5 year mix the ingredients for the batter and dredge and she loved being so involved! Only difference I made was to cut the hot spices in half. Used a tsp of Crystal hot sauce, half a tsp of garlic & onion powder, and a tbsp of dill to ranch dressing. Kiddo claimed the last 5 pickle slices and gave me a smug smile. I also used Claussen wholes for the pickle. Interested in trying some local pickle spears to see if the breading holds up.
