Cooking Instructions

Peel and seed squash, and cut into approx 1/2" squares
- 2
Heat oil in pot. Add onions and saute until soft, about 5 minutes.

Add the chopped squash, tomatoes, beans, corn, and broth and the package of Native American Three Sisters Stew Spice Blend.

Stir to blend well.

Bring to a simmer.

Gently Simmer until squash is tender, about 20 to 25 minutes.

If needed add more broth

Adjust salt and pepper to taste

Then let stew stand, off of heat for one hour. To let the flavors blend.

Then reheat, add the cilantro and serve. Enjoy!!

I used my left over vegetables . One egg plant was gone half bad, used my frozen tomatoes , and add a can of black beans. You can use any can of legumes ( chickpeas , white beans, but lentils would not be a good idea, )if you don’t want to use oven you can use same pot to cook if you are too lazy or have no time. . I’m a former restaurant chef who’s lived in New Mexico on and off for nearly 40 years (as well as Mexico, New Orleans, San Francisco, Lisbon, and a few others), and I am totally addicted to red and green chile of course.This is one of those “let’s eat what we have in the fridge“ recipes. The Shaoxing wine is quite salty, but adds an amazing flavor to this. I found an organic bottle online that I have been testing out in just about everything. It’s one of those ingredients that if you’re new to it you realize is probably in so many Chinese food dishes, and is a flavor you just didn’t realize you knew. I’m a fan.You could make this with rotisserie chicken from the grocery store, a bottle of roasted green Hatch chile (or even Anaheim, if you’re an uncouth savage) and some store-bought chicken stock. Or you can go all out and do it all from scratch. The one thing I am particular about is making sure that the broth is hot when you add it to the roux so it does not break.Anyway, give it a try and enjoy! I can’t believe how well this turned out, honestly. Dug in the freezers and found frozen partial bags of peas and corn lol par for the course with me. This recipe has been one I run to when I need a good meal with little effort. Best is you can use what vegetables you have on hand. One pot to use and the flavor seems like it simmered all day.
