Ingredients

  1. Dressing
  2. 3 tbspolive oil
  3. 2 tbsplemon juice
  4. 1/2 tsplemon zest
  5. 2 lbzucchini
  6. 1/4 cupchipped fresh mint
  7. 2 ozmixed baby greens
  8. 4 ozgoat cheese
  9. 1/4 cupchopped black olives
  10. 1/4 cuproasted pine nuts or sliced almonds
  11. 1 eachsalt, to taste
  12. 1 eachblack pepper to taste

Cooking Instructions

    In large bowl mix the dressing ingredients

    Trim the end off the zucchini

  3. 3

    Using a peeler or mandolin, shave the zucchini lengthwise to create ribbons. Make the ribbons about 1/6th inch thick. When you get to the center of the zucchini, flip it over and do the other side, until you reach the center.

    Add the zucchini ribbons to the bowl with the dressing. Add the mint, olives and greens. Toss gently to coast with the dressing.

    Top with the goat cheese and nuts. Serve right off.

My wife is disabled, she has M.S. And she finds it hard to cook from her wheelchair. I like a variety of foods, but hate tomatoes, so you don't see too many of my recipes with tomatoes on them. Also both of us have type II diabetes, so high carb and sweet is usually not on the menu either. We have one married daughter, and one that now lives in the Seattle area. We live in Texas, USA with our two dogs.Sorry I have not posted in awhile. Been taking chemo and radiation. and it has taken some out of me. Doctor says it seems to be working, so there is that.
