Ingredients

  1. 8 ozangel hair pasta
  2. 1/4 cupgood olive oil
  3. 4 largecloves garlic, minced
  4. 1 smallonion, sliced
  5. 1red bell pepper, sliced
  6. 12whole fresh cherry tomatos
  7. 1/4 tspred pepper flakes
  8. 2 tspfresh lemon juice
  9. 1/2 tspblack pepper and salt to taste
  10. 1 tsphot sauce such as franks brand
  11. 1/4 cupgrated parmesan cheese

Cooking Instructions

    In a skillet add olive oil, garlic, peppers, onions, tomatoes and seasonings, except the cheese, cook until vegetables are tender and tomatos softened but still holding their shape.

    Meanwhile bring a large pan of salted water to a boil, add pasta cook according to box directions do not overcook. With a pasta fork or tongs transfer cooked pasta to sauce in skillet, add cheese, heat through add a bit of hot pasta water if it seems dry. Taste for salt, and pepper. Tranfer to serving dish and serve with more parmesan cheese if you like!

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.

Good if you add mushrooms and a little more oil
