This is a very simple yet very tasty dish. I used one 16oz can of diced tomatoes, 1 medium size eggplant and Pasta. The sauce can be stored for future use and Pasta dish can be read under 10 mts.

Ingredients

4 servings
  1. 2 TBOlive oil
  2. Fresh Garlic Cloves smashed 6
  3. 1/2Chopped onion
  4. 1ts salt
  5. 1 TBNational Brand Achar Masala
  6. 1Medium sized eggplant
  7. Diced Tomatoes 1 16oz can
  8. 1/2 lbAngel Hair Pasta

Cooking Instructions

  1. 1

    Heat olive oil in a Pan. Add Garlic and Onion. Cook 3 minutes on low heat. Add Achar Masala and add Eggplant pieces cut into 1 inch pieces. Cook 10 mts.

    Add a can of Diced Tomatoes. Cook with Egg plant on low heat for 10 mts. Your sauce should not be ready.

    .Boil Angel Hair Pasta in salted water for 5 minutes. Drain Pasta and Mix with the sauce.

    Serve Hot. Garnish with freshly chopped cilantro.
