Beef stew
I must admit this recipe is really for a beef pie, but the insides where so good, why not just have the insides!! I think it qualifies for stew!! You can cook the first part in a skillet but you do need a Dutch oven to complete it. It is rather fiddly to make but I guarantee you'll be happy with the results. Props to my hubby as well for the photography as usual!!

Beef Stew
It’s funny... I made some chili last week. As I was thinking in my head, “What the hell goes in chili”? I started saying, “Wait, no. This is sounding like a beef stew”. So... I decided to make a beef stew now. It’s cold now and these dishes warm the soul. I never appreciated beef stew when I was younger. But I realize how fine of a dish it is in my older age haha.

Hamburger Stew
My sister in-law made this for the first time the other day and told me to try it. Please read full recipe here as I added some notes that I did to change the recipe some in case you want to make it the exact same way. Following the recipe as it’s originally written will still be very good though I just changed it to how me and my family would like it.Here’s the website it came from:https://www.saltandlavender.com/hamburger-stew/I doubled the potatoes and carrots and added peas and corn. Add or omit whatever vegetables you would like!

Veggie Stew with just Carrots & Peas in Tomato Sauce
Hello everyone…hoping the weekend was a good one. It’s Monday, the beginning of a new week and hopefully a good one for everybody. This weekend was quite warm. sunny and just lovely to be outside. When I mean outside I just sat in the garden and caught up on some reading material on food blogging of course, and some other things that I needed to catch up on. I did a bit of gardening 🙂 and I just wanted to thank Luda from Plants and Beyond, for her advise in regards to adding coffee grinds into my small garden it was spot on! 🙂 All my herbs and salads flourished these past weeks, and we were able to have home grown lettuce in our salads!! hooraayyyy 🙂 Just fantastic!! I also planted Broccoli, this has become huge I am not sure if my little garden will be able to hold it. 🙂This is a Greek dish…with ingredients that I am hoping would exist in everyones fridge. I know that Carrots and Peas may not be the first choice for lunch or dinner, but if you add tomatoes and a bit of tomato paste well I am sure you will be going back for more. 🙂 It is truly a very simple recipe just a few steps and you’ve got a delicious and healthy meal for lunch or dinner or even a side dish.. 🙂

Quick, Light & Refreshing Mushroom Stew (slow cooker Shashouka)
I wanted something light for lunch and had some mushroom. There was also this Shashouka recipe staring at me so, I fried the mushrooms, added some simple spices and threw it into the slow cooker for less than 2 hours. Give it a shot too! I did not have a can of crushed tomatoes; instead, I had leftover tomato paste and some fresh tomatoes so, I modified using both instead and I preferred it to be a little sweeter (sweet tooth be damned!) so, added some honey/syrup. Traditionally, it has eggs in it. We served with leftover roast chicken.

P-lo's Carne Guisado 👈 🏼Spanish Beef stew
My grandmother made this and I gave it my twist!.. Good as stew or over rice... Keep your carrots and potatoes a lager cut this way when it's boiling down doesn't turn to mush and add frozen peas I find better hold than can peas the last 5 minutes .. For a robust flavor add tub of Sofrito in frozen Spanish section .. I will make soon and post.. My grandmother added can of tomato sauce as well when I add my tomatoes plus small can of tomato paste when add Sazon packets... Didn't have so didn't use good either way
