Yes you head it right it is the Aam panna made from roasted raw mangoes.
Sharing one of rare recipe of my grand mother which is lost now a days after invention of cooker.
Earlier for making aam panna my granny used to roast raw mangoes on heat .
Aam Panna is a popular summer cooler in the Northern parts of India. It is a lip smacking, healthy and refreshing drink and is also known to fight the intense heat during the summer months.

Ingredients

40 minutes
4 servings
  1. 2large raw mangoes
  2. 4 glasseswater approximately
  3. 2 cupscrushed ice
  4. 1/2 cupsugar or as per the taste
  5. 1/2 teaspoonblack salt/kala namak
  6. 1.5 teaspoonsroasted and powdered cumin seeds
  7. 1 cupfresh mint leaves
  8. 1green chilli,optional
  9. 1/2 teaspoonblack pepper
  10. 1/4th teaspoon dry mint powder
  11. For the garnish
  12. 2 teaspoonbesan boondi
  13. 2 sprigsmint leaves

Cooking Instructions

    To roast the mango: Fix a fork in the flesh of the raw mango and roast in open heat(flame) until you get the aroma and the mango is soft.

    Remove the black charred peels of the roasted mangoes.

    Add water and mash the pulp through the strainer and squeeze the pulp from the stone or the seed also.

    Combine rock salt, sugar, roasted cumin, black pepper and mint leaves with a little water in a processor till they become a smooth paste.

    Add this paste to the mango pulp and mix till well blended.

    Add 4 cups of chilled water, mix well and serve chilled with ice and garnish with more fresh mint, mint powder and lots of ice.

    Alternative method
    Wrap the mango with a foil and roast it in the oven at 350 degree F till the flesh is soft.
