Cooking Instructions

Pre-heat your oven to 150 degrees Celsius.

In bowl, break your eggs,add black pepper and salt as you stir.

Chop your vegetables and mix with the egg mixture.

Pour the mixture in an already greased pan.

Put it in the oven to bake for 10 to 15 minutes.Check if it is ready by inserting a fork in the middle.

Serve while hot with hot coffee or tea

I can't remember where I first saw this recipe but I've been making it for years. You can sub the ham for bacon, turkey, sausage or any other protein you like and I just use whatever cheese I have in the fridge. I've never made it using a full-sized muffin pan but I'm sure its possible using larger proportions. Just use your imagination or what's on hand and go with it! Hope you enjoy!! rbrown32774 -

In The original recipe blueberries , and 3 large eggs are used. I decided to use cranberries . In every cup of cranberries, there is only 4g of sugar. This compares to blueberries 15 grams of sugar per cup, I also double the recipe but used only 2 eggs for 24 muffins . Each egg contains 5g of fat. you may want to use 3 eggs for 12 muffins , ?
