Ingredients

  1. 1 cupBesan (Chickpea flour/ Gram flour)
  2. 1 pinchHing/ asafoetida
  3. 1 tablespoonSugar
  4. to tasteSalt
  5. 1 teaspoonCrushed ginger and green chilies (optional)
  6. 1.5 teaspoonEno (fruit Salt)
  7. 1/2 teaspoonCitric acid
  8. 2.5 tablespoonOil
  9. 3/4-1 cupWater
  10. for tempering:
  11. 1 teaspoonMustard seeds
  12. 10-12small Curry leaves
  13. 1 teaspoonSugar (optional)
  14. 2-3 tablespoonWater (optional)
  15. 4-5small Green Chilies
  16. 1 tablespoonOil

Cooking Instructions

    Assemble all the ingredients.

    In a big bowl add besan, hing, salt and sugar.

    Just before steaming, add the fruit salt and mix lightly

  4. 4

    Pour the mixture immediately to a greased thali and spread evenly by rotating the thali clockwise

  5. 5

    Steam in a steamer for 10 to 12 minutes or till the dhoklas are cooked. Keep aside.

    Heat the oil in a small non-stick pan and add the mustard seeds

  7. 7

    When the seeds crackle, add the sesame seeds, asafoetida, curry leaves and green chillies and sauté on a medium flame for 30 seconds.

    Remove from the flame, add ½ cup of water and mix well.

  9. 9

    Pour the tempering over the prepared dhoklas and spread it evenly.

    Cut into pieces, garnish with coriander and serve immediately with green chutney
