#Starters - These delicious Arbi (Colocasia) cutlets are just perfect as appetizers along with green chutney / ketchup or can be sandwiched in between burger buns / bread with a green chutney spread for a lunch box meal. They can either be pan fried or deep fried.

Ingredients

  1. 10-12 piecesArbi (med. size Colocasia)
  2. 2 tspbesan (gram flour)
  3. 2 tbsprice flour
  4. 1 tbspcoriander leaves chopped
  5. 1 tspginger grated
  6. 1onion chopped
  7. 2green chillies chopped
  8. 1/2 tspgaram masala powder
  9. 1/4 tspturmeric powder
  10. to tastesalt
  11. 1 tspred chilli powder
  12. 1 tspkalonji (nigella seeds)
  13. 1/2 cuprice flour for coating
  14. as neededoil to deep fry

Cooking Instructions

    Boil the Arbi till soft (2-3 whistles in pressure cooker). Drain and peel the skin. Mash them well and mix with all the following ingredients except oil.

    Wet your palm and shape the mix into cutlets. Coat with the rice flour and chill for an hour in the refrigerator.

    Heat oil in a pan and deep fry the cutlets till golden brown on both sides. Drain on a kitchen towel.

    Serve them hot with any chutney or sauce.
