I was looking for a healthy stuffed pepper recipe and I came across one that almost met my expectations. However, everything was beef. I am not against beef, but wanted to try something different. Why follow the paved path when you can make your own.

Ingredients

  1. 6large bell peppers (I like adding color to my dishes)
  2. 2 lbsraw ground pork sausage
  3. 3 cupscooked brown rice
  4. 2 cupschicken broth (15 oz. Can)
  5. 1 (15 oz)can diced tomatoes
  6. 1medium onion, diced
  7. 3 clovesminced garlic
  8. 2 cupsshredded cheese (whatever is your favorite)
  9. 2medium eggs
  10. 2 tspSea Salt (regular salt also works)
  11. 1.5 tspground black pepper

Cooking Instructions

    Cut tops off the peppers, remove seeds & ribs from inside

    In a large mixing bowl: combine ground pork, cooked rice, 1/2 can diced tomatoes, onion, garlic, cheese, eggs, salt & pepper

    Mix well until evenly combined

    Stuff peppers with mixture and place in crockpot, stuffed side up. (I prefer to fill peppers after I place them in crockpot)

    Pour chicken broth over and around peppers

  6. 6

    Next, pour the rest of the canned tomatoes over the peppers

  7. 7

    Cover and cook on high for 4 hours or on low for 5 1/2 to 6 hours
