Ingredients

  1. 3chicken breasts
  2. 2 tbsbutter
  3. 1 pkgtaco seasoning
  4. Sea salt
  5. Black pepper
  6. For the sauce
  7. 9lg crimini mushrooms, sliced
  8. 3 clovesgarlic, sliced
  9. 1/2lg sweet onion, sliced
  10. 2 tbsbutter
  11. 3 tbsflour
  12. 2 tspgranulated chicken bouillon
  13. 1 1/2 cupsheavy cream
  14. 1 1/2 cupsshredded mozzarella
  15. Garnishment
  16. slicesAvacado
  17. 1/2bunch, chopped cilantro
  18. Lime wedges
  19. Shredded mozzarella

Cooking Instructions

    Cut chicken into bite sized pieces.

    Heat 2 tbs butter in a lg frying pan. Add chicken, taco seasoning, salt and pepper. Fry until chicken is just done. Can even be a hair undercooked. Remove chicken and pan drippings to a bowl and set aside.

    In the same pan, heat a tbs of oil. Add sliced onion, mushrooms, and garlic. Saute until everything is sweated off and just starting to carmelize.

    Add 2 tbs butter, and flour to the pan. Cook for 1 to 2 minutes just until it starts to smell nutty.

    Slowly add cream stirring constantly. Bring sauce to your desired thickness, I try to shoot for a thick gravy consistency. Add bouillon and cheese. Stir well. Add chicken back to the pan and heat through.

    Plate chicken. Add desired garnish. Serve with beans and rice if desired. Enjoy.

cooking is a passion of mine. I started when I was very young and I had to drag a milk crate around to see over the counter. taught by a career cook (my grandmother ). I have always tried to push the boundaries of conventional cooking. I prefer cooking wild game. when I can get my hands on it, but fish is more readily available for me. I raise and butcher most of the livestock that I use for my conventional recipes. I hope everyone can find a few recipes they like in my list.
