Ingredients

  1. 1dry aged sirloin/rib eye steak (227g)
  2. 50 gsalad leaves
  3. 2 tbspwhite wine vinegar
  4. 1 tbsphot horseradish
  5. 1 tbsphoney
  6. salt and pepper

Cooking Instructions

    Place a skillet or heavy based saucepan and heat until smoking. Add the steak and cook for 2 min on each side. This sears the meat sugars and gives a dark grilled look.

    Take the steak out of the pan and wrap in tin foil. Place in the oven (on a tray) at 130C for 30mins.

    Mix dressing ingredients in a bowl. Shred the arugula and add to the dressing. Mix well.

    Take sirloin steak out of the oven and slice. (If the meat looks too pink, cover back up in the foil and leave to stand for 5 mins. The steak will continue to cook).

    Place the steak on top of the dressed salad and serve.
