There is a famous Shanghai dish called “You Bao Xia”, meaning oil hot fried shrimp. This dish is my own version of it. It uses less oil and only use non-inflammatory ingredients which is friendly to the stomach. It tastes delicious.

Steps

Peel and slice the ginger. Slice the white part of the leek.

Stir-fry the ginger in a pan until fragrant.

Add the shrimp with shells and cook until they turn pink.

Add the sliced leek and stir-fry briefly.

Pour in coconut aminos and maple syrup. Add salt to taste.

Stir and cook for a short time until everything is well combined.
Tips
For extra flavor, consider marinating the shrimp in coconut aminos for 15 minutes before cooking.
