Lentil soup with shredded roast chicken

Ingredients

  1. 1onion finely chopped
  2. 2celery sticks finely chopped
  3. 1carrot finely chopped
  4. 1large tomato chopped
  5. 3garlic cloves chopped
  6. 1/2 tspcumin powder
  7. 1/2 tspturmeric powder
  8. Paprika, salt and pepper to your liking and taste
  9. 3 cupschicken stock
  10. Leftover roast chicken shredded
  11. 1/2 cupred lentil washed and soaked for 10 minutes
  12. Parsley or coriander for garnish
  13. Juice of 1 lime
  14. 1 tbspolive oil

Cooking Instructions

    In a hot sauce pan, add oil garlic and onion, cook for 3 minutes before adding celery and carrots cook for 5 minutes, now add tomatoes and cook until tomatoes have disintegrated about 3 to 4 minutes

    Now add spices, washed lentils, stock let it come to a boil, then add shredded chicken, turn heat on low and leave to cook for 1/2hr. Turn off the heat and let it rest for 10 minutes

    In a bowl scoop 2 ladles of the chicken lentils and vegetables mixture, pour a few ladles of soup, top with a sprinkling of chopped herbs and a few drops of lime juice and enjoy!
