Ingredients

  1. 1 headbroccoli
  2. 3sweet potatoes
  3. 2potatoes
  4. 1onion/ chopped
  5. 2 clovesgarlic
  6. 1 bunchparsley
  7. 1 cupgreen onions/ scallions
  8. Salt and pepper
  9. 1egg
  10. 1 cupgrated Parmesan cheese
  11. Bread crumbs if needed

Cooking Instructions

    Peel and steam the potatoes (steam last sweet potatoes, they cook quickly)

  2. 2

    Steam broccolis, peel and chop onions, scallions, add into broccoli and potatoes, add egg and cheese, garlic, salt and pepper, parsley

  3. 3

    PreHeat the oven 400F. Cook about 20 mins. Turn patties over half way through.

I used to be a runner. One day middle of the run, I had my feet numb up to my knee. It was sciatica from a car accident years ago. Then because having problems with my Achilles, I started using a cane. Now I changed my diet completely... no more sugar or process foods. My recent recipes are vegetarian, I do not eat meat anymore!
