I'm trying to make a switch from sunflower oil to coconut oil in my cooking for the extra health benefits. I'm hoping it will make a difference to the stubborn areas of Jacks skin that get dry and itchy with his atopic eczema. My friend was recently told by her daughters new doctor (they've just moved to Brunei) to give her 2 tbsp of coconut oil a day in her diet. She has extreme eczema so fingers x'd it works for her

Ingredients

50 mins
6 servings
  1. 12skinless chicken drumsticks
  2. 120 mlmelted coconut oil
  3. 7 clovesgarlic, finely chopped
  4. 2 tbspsmoked paprika
  5. 2 tbspdried oregano
  6. 2 tspdried parsley
  7. salt & pepper

Cooking Instructions

50 mins
  1. 1

    Preheat the oven to gas 7 / 210C / 425F and line an oven tray with foil

  2. 2

    Pat the chicken dry and season with a shake of salt & pepper

  3. 3

    Mix the rest of the ingredients together

  4. 4

    Spoon half over the chicken, rub in with the back of the spoon, then turn and repeat

  5. 5

    Bake for 45 minutes, turning once halfway through cooking
