Mango Cheesecake

Preheat the oven to 180 degree Celcius

To prepare the crust, mix the graham cracker crumb, melted butter and the 2 tbsp sugar in a bowl. Stir until they are evenly combined and transfer the mixture into a 9 inch springform pan. Press the mixture so that they will form base with even surface.

Bake the crust for 10 minutes, then let it cool. Grease the side of the pan with butter.

For the cheesecake mixture, start by beating the cream cheese at room temperature until light and fluffy. add the 1 1/4 cup of sugar gradually. Remember to scrap the bottom of the bowl often to make sure all cream cheese are incorporated.

Beat in cornstarch, vanilla, lemon zest, and lemon juice.

Beat the eggs one at a time on lower speed, then add the egg yolk.

Keeping the beater at low speed, add in the sour cream. Dice 1 mango and put it into the mixture.

Pour the mixture over the crust, and bake them again for another 40 minutes at 160 degree celcius for 40 minutes until the mixture stabilizes. Let the cake stay for another few minutes if the mixture still jiggles.

Let the cake cool. Slice the remaining 3 mangoes into thin slices for decoration as follow.

This dessert has total ofnet carb 8gcalories 702kcalmonkfruit has a tinge of sour aftertaste, perfect for zesty dessert. you can change it to any other sweetener of your choice (just search for sweetener conversion chart).the filling is tadbit dense, to reduce density you can swap 1-2tablespoon of sourcream to heavy cream (if u drop sourcream completely from recipe u might loss a bit of the tanginess, up to you).the keylime zest is to mix in the filling, i left out a bit to sprinkle on top for fun.u can mix it manually but some effort to use mixer is totally worth it.you can change it to other lemon if you want. Tapi bahan tak cukup.Makanya ummi buat Cheese Cake dengan menggunakan bahan yang mudah didapati di pasaraya ataupun pasar mini. Disebabkan ummi kesuntukan masa, ummi gantikan biskut biscoff dengan biskut tiger. Sour cream pun ummi tak letak sebab dah ada lemon untuk rasa masam. Satu lagi ummi suka guna Beqa Tatura Cream Cheese yang bungkus kuning ni sebab rasa lemak berkrim tu cukup rasa dan sesuai lah dengan kek ni.
