Ayam Panggang Kecap / Baked Chicken in Sweet Soy Sauce

I got the recipe from chef Willgoz on Youtube. Even though the title says sweet soy sauce, the soy sauce itself doesn't really play an important part. The other spices help make the rich taste.

It is very tasty! enjoy by itself or with a plate of hot rice with some sambal. Hope you like it!

Ingredients

  1. 2 cmginger
  2. Spice paste:
  3. Other:
  4. 5 tbspsweet soy sauce
  5. 5garlics
  6. 8shallots
  7. 1 tspsalt
  8. 5 tbsptamarind juice
  9. 5candlenut (lightly panfried)
  10. 2 cmturmeric
  11. 1whole chicken, cut into 4-8 (I use 5 drumsticks)
  12. 2 cmgallangal
  13. 5red curly chillies
  14. 5 tbspoil
  15. Chicken powder if you want
  16. 1 tspsugar
  17. 2 tspsalt
  18. 250 mlwater
  19. 5kafir lime leaves
  20. 2 pieceslemongrass, smashed

Cooking Instructions

    For the paste: blend everything in a blender or grind using stine mortat and pestle until it becomes a smooth paste.

    Put the oil in a pan. Add in the chicken, the spice paste and all the other ingredients, such as the lemongrass & lime leaves, except for the seasonings.

    Then add in the water. Mix thoroughly. add in the seasonings.

    Simmer until the spice paste thickens and penetrate through the chickens.

    Take the chickens out. Continue simmering the paste until really thick. Turn off the heat.

    Put the chickens on a tray. Add the spice on top.

    Preheat the oven to 200°c.

    Put the chickens in. Bake for 10-15 minutes.

    Serve.

Want to try it but it’s very difficult to find galangel in the UK. Can I make it without galangel?
