Double Drunk Borracho Beans (Instant Pot)

Traditional Borracho beans simply add beer to the broth, in my rendition I soaked the beans in beer before cooking as well, giving them an extra oomph of flavor and making them “doubly” drunk. ;)
Cooking Instructions

Soak beans in light beer 🍺 preferably overnight but at least 3 hours

Chop veggies 🌶

Add beans to instant pot with broth, chopped veggies (besides chives), spices, and dark beer

Stir, and cook for 1 hour, it took about 30 minutes for ours to pressurize.

Stir, add to bowl, top with chives, and enjoy with a cold beer 🍻

A one pound bag of dried beans is too much for just the two of us so I break them in half and make two different things out of them. The first go-round which was the first time I tried making dried beans in my instant pot, was red beans and rice. Don't look, you won't find it here because even though it tasted exceptionally good there were quite a few fails during the process. So I modified the recipe and here is the new one, but we're eating this with bread instead of rice because my wife wanted to, so it has a thinner broth. So give this a try and I'm pretty sure you will enjoy it. If you use a different type of bean, most likely you will need to adjust the cooking time. These small red beans take a lot longer to cook then some other types of dried beans.

#CA2025 A friend brought this to one of our cookouts. Everyone loved it. You can slow cook in your crockpot or simmer on the stove. I like to use smoked brisket if I have any leftovers. Serve with tortilla chips, sour cream, jalapenos, cheese whatever suits you or eat without extras. This can be a meal by itself or a game day appetizer.
