Another recipe using store bought pie shells. I was inspired when I tried Costco's Shepherd Pot Pie. Of course, I always want to make something my own way. Feel free to do your own thing! I ended up combining
different recipes to end up with this one. Let me know if you try it, and any tips! I made enough for 4; baked 2, then will bake other 2 later. To keep things simple, I microwaved frozen packaged mashed potatoes. However, you can make your own. I would mash with a hand mixer using sour cream, 1 egg yolk, & some parmesan cheese.

Ingredients

2 pies
  1. Frozen pie shells, ×2
  2. 2 lbslean sirloin--93% (brown using some olive oil)
  3. 2 cartonsfrozen sour cream mashed potatoes, such as *Bob Evans
  4. 1 cancream of mushroom soup
  5. 1 cupsour cream
  6. 1 cupsweet red wine
  7. 1 bagfrozen peas and carrots
  8. 1 bagfrozen corn
  9. 1large onion
  10. 4garlic cloves
  11. 2 stalkscelery
  12. 1 tablespoonherb seasoning--(I used homemade Italian seasoning)
  13. salt, pepper --(optional)
  14. parsley
  15. shredded parmesan cheese

Cooking Instructions

    Brown the meat with some olive oil, diced onion, celery, and minced garlic. Do not drain.

    Bake the pie shells for about 10 min's in 350 degree oven. Remove from oven and cool.

    To the meat, add cream of mushroom soup, sour cream, red wine, herb seasoning, frozen vegetables. Combine altogether.

    Divide the meat mixture between pie shells. Top with mashed potatoes. Run a fork across top to make pattern if desired. Sprinkle with parsley and shredded parmesan cheese.

    Bake at 350 until tops and crusts are browned. Allow to sit and cool slightly before slicing.

I believe I inherited a love of cooking from my paternal grandmother, who I'm told was a fabulous cook. She passed away when I was very young, so I never had a chance to know her well. She was Italian, and passed her love of cooking down to my father, who always took pride in his Italian spaghetti. I love to keep my recipes simple. I often combine recipes and use my own ideas to make my own creations. I always say a recipe is just a guide, not a rule book. I also have a Filipino husband who also loves cooking Asian, so we have fun trying each other's recipes, and often cook together.
