Spicy Sausage and Tomato Quiche

I work with the elderly doing home healthcare. I've noticed many of them eat quiche, as it's so delicious, nutritious, and easy to prepare and reheat. I was inspired to put one of my own together. It's a colorful quiche/breakfast pot pie.
It's colorful and tasty. I use store bought pie shells, but I suppose you can make your own pie crust, or maybe even make with frozen hash browns in a casserole? If someone does that, let me know! You could add mushrooms, spinach, maybe even kale. As I always say, recipes are guide books, not rule books... So, make it your own!

Cooking Instructions

Brown 2 lbs. Jimmy Dean Hot Sausage with minced garlic, drain.

Whip together 8 eggs with 2 cups half and half. Add diced green pepper or green chilis, diced white onion, shredded sharp cheddar cheese or colby jack, sliced cherry tomatoes, & 1 tbsp. pepper/garlic seasoning.

Divide the browned sausage on bottom of two store bought pie crusts. Pour egg/veggie mixture over both. Top with some shredded mozzarella cheese.
Bake at 375 for about 45-50 min's.

I wanted to make flaky pie crust, so I added almond flour, and used shortening instead of butter. You can use anything you like to make the filling. Use cheddar cheese with good flavor if possible, but pizza cheese is ok as well.These amounts are to make a 18 cm pie. In summer, chill the cake flour, and mix the ingredients without kneading. If there are any lumps of shortening, they will melt while baking and make holes in the crust. It's safer if you cover the crust before you put it in the oven.
