I wanted to make a quiche, but nothing usual or "traditional" in the mix. Suddenly I thought of an episode of Southern at Heart on Food Network when she made baked cheesy grits with collards. I thought, "What about a Southern inspired quiche?" I had andouille sausage and decided to give it a go. Hubby approved! Lol

I work with the elderly doing home healthcare. I've noticed many of them eat quiche, as it's so delicious, nutritious, and easy to prepare and reheat. I was inspired to put one of my own together. It's a colorful quiche/breakfast pot pie.It's colorful and tasty. I use store bought pie shells, but I suppose you can make your own pie crust, or maybe even make with frozen hash browns in a casserole? If someone does that, let me know! You could add mushrooms, spinach, maybe even kale. As I always say, recipes are guide books, not rule books... So, make it your own!

A quiche is my go to dish for when I have a play date to go to or have company over! Super yummy quiche can be served for breakfast, lunch and dinner!
