Rajasthani thali (khooba roti, mungdal khichadi)
Cooking Instructions

For khuba roti

In mixing bowl add flour, salt, and malai, mix it well till bread crumbs consistency
Now add little water at a time and knead bit hard dough than required for making regular roti. - 3
Cover the kneaded dough and keep aside for 20 minutes to set.Make a round dough ball. Place the dough ball on rolling plate and roll into 1/2 cm thick roti.For roasting roti, preheat tawa. Place the roti on heated tawa and cook on medium flame. When roti turns brown from beneath, flip the side. Make small peaks with help of your thumb and finger on the roasted side of your roti. Make peaks on the entire roti. Keep the flame to minimum. Roast until roti gets brown spots on the other side.

Now flip the roti and cook for 2minutes, Place the roti on plate and spread 1-2 छोटा चम्मचghee over it. Pour ghee in the holes over roti. It will be absorbed completely. This will enhance the flavor.

For mung dal rice khichadi
Take rice and moong dal in a bowl.Soak it in enough water for 20 minutes. After 20 minutes, drain the water and set aside.

In cooker heat ghee add cumin and musterd seeds, green chilli and hing and saute for a minute, add mung dal and rice mix it well,add red chill powder, mix well add water and salt

Mix it well,Cook till 3whistle on medium flame, delicious khooba roti and mung dal khichdi ready to served with kadhi and desi ghee
