Cucumber filled salad

Here's another my favourite summer salad❤️Me and my daughter love carrots and eat anyway, but I'd like my husband to enjoy it too. He loves coconuts, so I put some flavour for him. He likes it very much😀

This vegetarian salad is perfect as a side dish or as a main meal. It is usually eaten with Nigerian Jollof or Fried rice.

I had some leftover simmered kabocha, so I thought I could make something with it using some mayonnaise and the result was delicious.The simmered kabocha has a nice flavor, so you just have to season with mayonnaise!!Adjust the amount of mayonnaise to taste.This is much more flavorful and delicious than usual kabocha salad. This is a simple recipe from my childhood. My stepfather always made this growing up. We ate this as a side dish, as an appetizer, at cookouts,...even as a topper for other foods! He usually only did "Cucumbers & Tomatoes in Italian Dressing" but when I started making it myself in my late 20s I started adding onion because I'm obsessed with them! 😆👌 Then, in my early 30s a good friend made this at her home with the addition of green peppers as she had grown a lot of them that year. So now, my personal recipe has adapted to the inclusion of all of these wonderful foods! I also, play around occasionally with the dressing. 😎👍 This particular time I used a raspberry vinaigrette in place of Italian Dressing & I have also used regular vinaigrettes as well. This is always a nice addition to dinner or the cookout. And even as a midday snack! 👏🤤

Light cream on salad is one of my favourite

I bought a salad in a shop once that contained quinoa and pomegranate and it tasted great, so decided to add all my favourite salad ingredients and make my own. The honey and lime dressing is a family favourite used often by my mother who is celiac. Lovely light dish that can accompany many things or as a meal of its own.

This is a nice, refreshing side dish for a summer meal. I use cucumbers from our garden when possible, but it's just as good with store bought.

I think I am addicted to this as well as other salads. So easy to make, healthy as well. In this photo you will see bits of finely shredded cheese. Ooops, I was making broccoli salad also and accidentally put the cheese, flax seed, sliced cherry tomatoes, and red beans in my onion and cucumber salad. That will teach me, to either keep the two recipes far apart, or only make one at a time 😊. This is my own amount of ingredients.

I usually pair it with some quinoa or brown rice, some chicken or drained and rinsed chickpeas and some feta cheese. If you'd like to take some of the 'bite' out of the raw onion, soak it in some cold water for a few minutes first.

I came up with this salad just to use two leftover plain sea bass fillets from the previous night. I am feeling strangely proud of it.The fillets were not enough to make a whole meal so I decided they would help make a fun friday salad.I immediately wanted to use some sauted cabbage and peas if only to include the acidic heat of the lemon pepper seasoning, which I always go for when cooking fish.At this point it didn't look like a salad at all so I decided to use some fresh produce to balance it out.And then there it was...Fun.
