Ingredients

  1. For chapdi
  2. 2 cupwheat flour (coarse)
  3. 1/4 cupRava
  4. 1 tspcumin seeds
  5. 1 tspwhite sesame
  6. 3-4 tbspoil
  7. to tasteSalt
  8. as neededWater
  9. For (undhiyu)
  10. 1/2 cupmix beans
  11. 1/4 cupchopped dudhi
  12. 1/4 cupchopped eggplant
  13. 1/4 cuppotato chopped
  14. 1/4 cupchopped sweet potato
  15. 1/4 cupcauliflower cut in smallpieces
  16. 1/4 cupchopped cabbage
  17. 1/4 cupVal papdi
  18. 1/4 cupchauri (indian string beans)
  19. 1/4 cupsurti papdi (indian flat beans)
  20. 1tomato chopped
  21. 1onion chopped
  22. 1 tbspginger garlic chilli paste
  23. 1 tsphaldi(Turmeric) powder
  24. 1 tspcoriander powder
  25. 1 tspred chilli powder
  26. 1 tspundhiyu garam masala
  27. 4 tbspoil
  28. 4cloves
  29. 1bay leaf
  30. 1whole red chilli
  31. 4-5black pepper powder
  32. 1 tbsplemon juice
  33. to tasteSalt

Cooking Instructions

    For chapdi dough, in a bowl take some wheat flour, add Rava, cumin, white sesame, salt, oil, and with the help of some water make a tight dough and put it a side for 5-10 mins

    With the dough take small proportions and press in your palms making them flat. Don’t make them too thick or thin we want it to be medium

    Take a pan and heat some oil. In medium heat now fry the chapdis

  4. 4

    For the undhiyu, in a pressure cooker, take some water, add all the mixed beans and cook for 3 whistles.

    Take another pressure cooker and add all the Vegetables with some water and cook for 3 whistles

  6. 6

    Now take a pan and heat oil. Add cinnamon sticks, bay leaf, clove, whole red chilli, and a pinch of hing, chopped onions. Sauté for a few mins and add your ginger garlic paste and sauté for 2 mins

    Now add you tomatoes, and sauté for few mins until they are soft

  8. 8

    Next add all the spices and undhiyu garam masala. Mix well and sauté for few seconds

    Now add all the boiled vegetables, mixed beans, salt and water. Boil for 2 mins

    Now add chopped coriander. And 1 tbsp lemon juice

  11. 11

    Your undhiyu is ready

    Serve hot Chapdi Tavo with onions and garlic chutney.
