Ingredients

  1. 1 1/2 cupsall-purpose Flour/ Maida
  2. 1 teaspoonbaking powder
  3. 1/2 teaspoonbaking soda
  4. 1/2 cupmango puree
  5. 1/2 cupghee or refined oil
  6. 1 pinchsalt
  7. 1egg
  8. 1 teaspoonvanilla essence
  9. 1/2 cupchopped mangoes
  10. 1/2 cupchopped dates
  11. As neededSliced dates
  12. 1/2 cupmango

    Sieve the maida, baking powder, salt, and baking soda in a bowl.

    In another bowl take the sugar and ghee or oil and whip it for 5 minutes. Then add the egg or yoghurt for eggless cake. If adding egg then whip the mixture till it becomes light yellow in colour. If adding yoghurt then no need to whip much.

    Add the mango puree and vanilla essence to the egg mixture or yoghurt mixture for eggless cake. Mix again. Then add the maida mixture and incorporate slowly to avoid overmixing.

    Add the chopped mangoes and dates. Then pour the mixture in a greased baking tin and put the sliced mangoes and dates on top.

    Bake the cake till a toothpick inserted comes out clean.check after 30 minutes. Serve with a cup of hot tea.
