Palak paneer pulao is a wholesome meal. It is a very healthy recipe at the same time it is a delicious dish to relish. Here I have used leftover palak paneer gravy to make this pulav. Whole spices and vegetables give it a flavour as well as a texture while protein packed paneer adds to its taste. The same recipe can be followed even for leftover rice. Instead of leftover palak paneer gravy, fresh spinach puree can also be used.

Ingredients

  1. 5 cupboiled basmati rice
  2. 2onion
  3. 1capsicum
  4. 1carrot
  5. 1/2 cupcauliflower florets
  6. 10green beans
  7. 1/2 cupgreen peas
  8. 3 tbspoil
  9. 1bay leaf
  10. 1 inchcinnamon
  11. 4cloves
  12. 2cardamom
  13. 1 teaspoonginger paste
  14. 1 teaspoongarlic paste
  15. 1/2 teaspoongreen chilli paste
  16. 1/4 teaspoonturmeric
  17. 1 teaspoonred chilli powder
  18. 1 teaspoongaram masala

  20. 1 cuppalak paneer gravy
  21. 200 grampaneer

Cooking Instructions

    Wash and chop all the vegetables.

    Heat oil and add bay leaf, cinnamon, cloves and cardamom to it. Now add thinly sliced onion and saute it until light brown in colour. Now add ginger, garlic and green chilli paste to it and cook it for one minute. Now add all the chopped vegetables to it and mix it well. Add turmeric, red chilli powder, garam masala and salt to it and give it a good mix.

    Now add palak paneer gravy to it and cover and cook it until vegetables are done but still crisp. Instead of palak paneer gravy, you can even make fresh spinach puree and use it. Now add paneer pieces to it and again cover and cook it for 3 to 4 minutes on medium heat.

    Add cooked rice to the gravy and mix everything well. Cook on medium heat for 5 minutes and turn off the heat.

    Serve palak paneer pulav with mix veg raita and papad.
