A muffin is an individually baked item which can be sweet or savory. We usually make sweet muffins but savoury muffins are equally delicious served with tea or coffee. Warm savoury muffins taste very good with some butter. It can be even eaten on its own. Any kind of vegetables or meat can be added to savoury muffins.
I have added spring onion and fresh garlic with fresh broccoli in these muffins to add some extra flavour. Cheese enhances the texture and flavour but it can be even skipped. Any kind of warm savoury muffins taste heavenly.

Ingredients

  1. 1.5 cup all-purpose flour
  2. 1 cup rolled oats
  3. 2 teaspoon baking powder
  4. 2 teaspoon sugar
  5. 1Teaspoon salt
  6. 1teaspoon black pepper
  7. 1.25 cup milk
  8. 1/4 cup olive oil or sunflower oil
  9. 2 teaspoon english mustard
  10. 1.25 cup finely chopped broccoli
  11. 1/2 cup finely chopped spring onion
  12. 1/2 cup finely chopped fresh garlic
  13. 1 cup cheese

Cooking Instructions

    Wash and finely chop broccoli, spring onion and fresh garlic.

    Add all-purpose flour, oats, baking powder, sugar and salt to a bowl and mix everything well.

    Now add milk, olive oil, english mustard and black pepper to a bowl and mix everything well. Add broccoli, spring onion and fresh garlic to it. Add small pieces of cheese to it and mix everything well.

    Line a 12-cup muffin pan with paper baking liner. Divide the the muffin mixture into equal portions. Bake muffins in a preheated oven at 200 degree for 25 minutes. When the muffins are done, they will rise and a toothpick inserted will come out clean. Take them out on a wire rack to cool.

    Warm savoury muffins served with some butter tastes delicious. It can be even served on its own with the cup of tea or coffee.
