Oatmeal and Fruit Blender Muffins

The original recipe for this calls for using some unsweetened applesauce, but I had some spotty bananas lying on my counter, so I switched it up (pictured up top with bananas). This muffin recipe is versatile and can work with either flavor. The batter is made all in a blender, making it a super easy process...even my youngest can whip up these muffins easily. These are good for a portable breakfast or a quick snack, along as a somewhat healthy-ish dessert. Recipe adapted from : Mind Over Munch @ YouTube.

Ingredients

12 muffins
  1. 2 cupsold fashioned rolled oats
  2. 1 cupunsweetened applesauce or 3 bananas
  3. 3large eggs
  4. 1/4 cuphoney or maple syrup
  5. 1/4milk (any kind)
  6. 2 tsp.ground cinnamon
  7. 1 1/2 tsp.baking powder
  8. 1/2 tsp.baking soda
  9. 1/2 tsp.vanilla extract
  10. 1/4 tsp.salt
  11. 1/4 cupfinely chopped nuts of choice
  12. Additional oats, optional for topping

Steps

  1. 1

    Preheat the oven to 400°F. Liberally grease a 12 count muffin tin pan or line with parchment liners and set it aside. These muffins are more prone to sticking than your average muffin, so if using liners, parchment ones are highly recommended over paper liners.

    Start by placing the oats into the blender and grinding them into oat flour. It will only take a minute or so.

    After that, add all the remaining ingredients EXCEPT for the nuts and blend until thoroughly combined. You may have to stop and scrape down the sides once or twice.

    If you have a high power blender, then you can add the nuts in and blend for about 30 seconds at the end. Mine isn't high power, so I chop the nuts and just stir them in with a rubber spatula.

    Pour into the prepared muffin tins. If you'd like, then you can sprinkle some extra oats over the tops.

    Bake for 13-15 minutes, until a toothpick inserted into one of the center muffins comes out clean.

    Let them cool in the pan on a wire rack for about 5 or so minutes, then remove them from the pan and place them on the wire rack to cool completely.

    Store them in an airtight container for up to 4 days.

I love to bake and to try out new recipes! I'm always on the lookout for simple dinners for busy weeknights. A lot of the recipes I post on here are ones I've found on Pinterest or from different bloggers, and that I've tried and really enjoyed, but I always reference to where I got the recipe from in the recipe description and the pictures are my own. If there's no source listed, then it's a rare recipe that I came up with. I have two wonderful kids and I hope to pass on my love of cooking and baking to them.
