Dal Khichdi is a perfect comfort food. It is very tempting and refreshing. Lovely dish to be had in summer. A protein rich food for little ones. One pot of comforting meal at any time.
Dal Khichdi is an Indian dish made with rice and lentils and spices and is garnished with tempering, fried onions and coriander leaves. It is served with pickle, papad, salad and yogurt. It is considered a wholesome and healthy food and is easy to digest. It is easy and quick to make. It is enjoyed best if the khichdi is served hot from the pot. Serve khichdi immediately otherwise it will become dry. If it turns dry, add little hot water and adjust the consistency. Ghee adds a good flavor and aroma, but if you are calorie conscious, use half ghee and half oil or just use only oil. I have used only masoor dal. You can make it with a mix of dals of your choice. You can add vegetables like peas, carrot, potato, beans and cauliflower to this khichdi.

Ingredients

  1. 1 cupBasmati Rice
  2. 1/2 cupMasoor Dal
  3. 1Onion (Chopped)
  4. 4Green Chillies (Slightly slited at the front end)
  5. 2 tspGarlic (Grated)
  6. 2 tspGinger (Grated)
  7. 2 SprigsCurry Leaves
  8. 1Tomato (Chopped)
  9. Salt to taste
  10. 2 tbspOil (For Making Khichdi)
  11. 3 cups+ 2 tbsp Boiling Hot Water (or more as preferred)
  12. 1 tbspCoriander Leaves (Chopped)-For Garnish
  13. Powdered Spices:
  14. 1/4 tspTurmeric Powder
  15. 1/2 tspBlack Pepper Powder
  16. 1/2 tspCumin Powder
  17. 1 tspGaram Masala Powder
  18. 1 tspKashmiri Red Chilli Powder
  19. 1 tspCoriander Powder
  20. Whole Spices:
  21. 1/4 tspCumin Seeds
  22. 1/4 tspFennel Seeds
  23. Few Black Peppercorns
  24. 2Dried Red Chillies
  25. 1Bay Leaf
  26. 1 InchLong Cinnamon Stick
  27. 2Cardamoms
  28. 3Cloves
  29. Asafoetida (Pinch)
  30. For Fried Onions (For Garnish):
  31. 1Onion (Sliced)
  32. 1 tbspOil
  33. For Tempering:
  34. 2 tbspOil
  35. 1/2 tspMustard Seeds
  36. 1/4 tspCumin Seeds
  37. Asafoetida (Pinch)
  38. 2Green Chillies
  39. 2Dried Red Chillies
  40. 1/4 tspKashmiri Red Chilli Powder
  41. 2 tbspFried Onions

Cooking Instructions

    Wash the rice and dal together and soak it in water for 15 minutes.

    After 15 minutes, drain the water and set aside.

  3. 3

    Heat oil in a kadai. Add all the whole spices and asafoetida and allow it to sizzle for few seconds.

    Next add green chillies and curry leaves and saute for few seconds.

    Add grated ginger and garlic and saute till the raw smell leaves.

  6. 6

    Add the chopped onions and salt and saute till the onions are translucent.

  7. 7

    Now add all the powdered spices and saute till the oil separates.

  8. 8

    Add the chopped tomato and cook till the tomatoes are soft and mushy.

    Now add the washed, soaked and drained out rice and dal. Mix it well so that it is coated with the masala.

    Now add the boiling hot water and mix it well.

    Keeping the flame on high, allow it to come to a boil. When it starts to boil, reduce the flame to low and cover and cook for 12 minutes. When done off the flame and keep covered for five to eight minutes.

    In the meantime, heat oil in a pan. Add the sliced onions and fry till golden brown and set aside.

    For preparing the tempering, heat oil in a tadka pan. Add mustard seeds and allow it to crackle. Add cumin seeds and asafoetida. Add green chillies and dried red chillies. Add kashmiri red chilli powder and off the flame. Add the fried onions. Mix and set aside.

    Remove the lid and garnish the dal khichdi with the tempering, fried onions and chopped coriander leaves.

    Enjoy delicious Dal Khichdi hot with homemade pickle, salad, papad and yogurt.
