Mango Rabdi is easy to make, traditional Indian dessert made with reduced milk and mango puree. It is thick, fruity, creamy, and soft in texture and is exceptionally delicious.

Since mangoes are only available in summer, it is a unique summer dessert. Making rabdi is a little time-consuming process since you need to reduce the milk to one-third of its original volume to get the thick creamy texture.

Ingredients

  1. 2bread slices (white)
  2. 1/2 litremilk
  3. 4 tbspmilk powder
  4. 1 tspchopped pistachio
  5. 1 tspchopped almond
  6. 1 tspchopped cashew
  7. 1/4 cupsugar
  8. 1/2 tspcardamom
  9. 1 tspghee
  10. 1/2 cupmango pulp
  11. 1/2mango chopped

    Take bread slices, cut the edges of the bread.

    Cut into pieces add into a grinding jar and make a fine powder.

    Heat full-fat milk in Pan, boil milk on medium flame. Add bread crumbs and mix well, stir continuously on low medium flame.

    Add milk powder in batches and mix continuously, cook until 2 boils.

    Add almonds, pista, cashew, sugar, cardamom powder, and mix well.

    Add ghee, mix properly. Turn off the flame and let it cool.

    To make a puree, peel 1 mango and make a fine puree.

    Add mango puree in rabri and mix properly, add chopped mango and give it a good mix.

    Put it in freeze for a minimum of 2 hr. Garnish with chopped mango and nuts.

    Instant Mango Rabri is ready to serve. Serve chilled.
