Ingredients

15 minutes
3-4 servings
  1. 1/4 cupArhar Dal (pre boil)
  2. 1/2 tspMustard seeds
  3. leavesFew Currying
  4. Hing
  5. 1medium Potato
  6. 1medium Onion
  7. 1medium Tomato
  8. 1small Carrot
  9. 1/2 cupdiced Ash Gourd
  10. 1/2 cupdiced Pumpkin
  11. 3-4Green Chilli
  12. 1 tbspSambhar Masala
  13. Tamarind Pulp (pre soaked)
  14. 1/2 tspRed Chilli powder
  15. 1/2 tspTurmeric
  16. Salt
  17. Oil
  18. 1-2dry red chilli

    Assemble ingredients

    Par boil carrot + potato + pumpkin + ash gourd and keep aside. Assemble all other ingredients.

    In pan add oil, let it heat, add mustard seeds and allow to crackle. Then add dry red chilli + curry leaves + hing and sauté for few seconds. Then add onion and sauté for few minutes til onion is golden yellow. Then add tomato + green chilli + turmeric + red chilli powder and sauté for few minutes, then add all boiled veggies + tamarind pulp + salt + SAMBAR Masala and boiled Dal and give a nice mix, cook for few minutes and SAMBAR is ready to serve.
    Add more water as per gravy preference.

    Sambar is ready, serve with hot steamed rice or Idli, Dosa,etc.
