Amaranth leaves are extremely nutritious greens that cover almost all nutrient groups. They are rich in iron, fiber, protein, Vitamins and folic acid.
This recipe is a perfect stir fry to serve for quick weekday meals as it comes together in under 15 minutes. Serve it with dal ,rice or khichdi and any Indian bread.
Cooking Instructions

First of all, wash and clean the Amaranth bhaji, separate the leaves and chop it finely.

Heat oil in a pan for curry. add mustard,cumin, asafoetida and saute tomato. Then add chopped amaranth, turmeric and salt. Add 1 cup of water and let it cook for 5 minutes.

Then add chili and garlic paste to it and cook again for 5 minutes and remove from heat. Green Amaranth curry is ready.
