Seasoned with Mentsuyu: Easy Stir-Fried Udon

いづみうな

Using mentsuyu and sake makes the stir-fried udon smooth and not sticky. On June 9, 2009, this became my 24th featured recipe. Thank you!
The origin of this recipe: At our house, we always season with mentsuyu instead of soy sauce or other sauces. It's really delicious!

Ingredients

Serves 2 servings
  1. 2 packscooked udon noodles
  2. 1little sliced pork
  3. Your choice of vegetables, as much as you like
  4. 1 tablespoonsake
  5. 1 tablespoonmentsuyu (triple concentrated)
  6. 1little soy sauce

Cooking Instructions

  1. 1

Make a small cut in the udon noodle package and microwave at 600W for 1 minute and 30 seconds.

  2. 2

Using a knife, cut the noodles in half through the package to make them shorter and easier to eat. Recommended for small children!

  3. 3

In a frying pan, cook the pork (the photo shows fish sausage instead of meat) until done, then add your choice of vegetables and stir-fry until tender.

  4. 4

Place the udon on top of the vegetables, add the sake, and stir-fry while loosening the noodles.

  5. 5

Once the udon and vegetables are mixed, add the mentsuyu. Taste and add a little more mentsuyu if it's too light.

  6. 6

Add soy sauce around the edge of the pan and let it caramelize slightly (10-15 seconds). When you smell a roasted aroma, lightly toss and let it caramelize again.

  7. 7

Serve on a plate and top with bonito flakes, pickled ginger, and seaweed if desired.

  8. 8

On June 15, 2012, I received 100 recipe reviews! Thank you! This 'Japanese-style Stir-Fried Udon' is a family favorite. Highly recommended.
